COLUMN DIETICIAN MEREL COENDERS
Pumpkin soup
When it gets colder outside, it is nice to have a nice warming recipe on hand. This pumpkin soup is tasty, easy and nutritious. The lima beans provide extra protein and make the soup filling.
Supplies:
Hand blender
Ingredients:
1 leek
1 (bottle) pumpkin
2 tablespoons olive oil
1 tablespoon curry powder
1 can of lima beans (400 g)
1 litre vegetable stock
200 ml coconut milk

Preparation:
Cut the leeks into rings. Wash well to remove any soil.
Halve the pumpkin and remove the seeds and stringy inside with a spoon. Leave the skin on. Cut the pumpkin into coarse pieces.
Heat olive oil in a soup pan and fry the curry for 30 seconds over medium-high heat. Then add the diced leeks and pumpkin and fry for 5 minutes. Stir frequently.
Drain the lima beans and rinse under running water. Fry these for another 1 minute with the leeks and squash.
Add the vegetable stock. Bring to the boil and simmer gently for 15 minutes. Check if the squash is cooked by pricking it with a fork.
Puree the soup with a hand blender.
Add the coconut milk and stir again.
Enjoy your meal!
